Coconut palms dominate the landscape on many of the outer islands of our country.

Together with the products of the surrounding ocean, coconuts are also major contributors to the village diet.

Did you know that Fijians even gather the sap of the tree? It is used in cooking and as a sweet beverage. When fermented and mixed with date paste and kefir grains it becomes the intoxicating drink known as coconut kefir.
